We wanted to celebrate our local area, which lies on the border between Tuscany and Umbria, with a series of tastings focusing on high quality products that enhance our wines.
The tasting comprises:
•Profumo di Vigna Tuscan Vermentino IGT accompanied by pork salami flavoured with saffron stigmas
•Rosso di Terra Chianti DOCG accompanied by raw milk cheese with added saffron stigmas
•Occhio di Pernice Chianti Vin Santo DOC accompanied by acacia and saffron honey containing the purest saffron stigmas
a €25 per person
For this tasting we have chosen products from a farm in Città della Pieve in the Province of Perugia called Terre di Confine, which produces organic saffron and for years has promoted the search for traditional recipes.
We have specifically paired our Rocco Profumo di Vigna with an aged pork salami flavoured with saffron stigmas, made using a retrieved old pork butchery recipe.
To accompany our Rosso di Terra, which is a young Chianti with a soft, elegant taste, we have chosen Oro Rosso, a raw milk semi-hard cheese that is matured slowly and features saffron stigmas grown and selected by organic farm Vinerbi Gianni.
Finally, for your utmost enjoyment of our Occhio di Pernice Vin Santo, we have chosen an acacia and saffron honey containing the purest saffron stigmas, also produced and carefully selected by organic farm Vinerbi Gianni.
