PRODUCTION AREA: San Casciano dei Bagni, Siena, Tuscany.
GRAPE BLEND: 100% Vermentino.
GRAPE YIELD PER HECTARE: 70 quintals
HARVEST: Grapes are manually harvested into crates after careful monitoring of the ripeness.
VINIFICATION: The grapes are destemmed only, and transferred to the press for a soft pressing, so that only the first and clearest must is extracted to obtain the free-run juice, which is cooled to a temperature of 8°C through a heat exchanger and after a first decanting, is poured and left to ferment at a temperature of 10°C for around 20 days.
AGEING: The wine is aged on fine lees, kept in suspension to avoid reduction phenomena and to benefit from its stabilizing properties. Lees ageing is for 3 to 5 months depending on the vintage.
CHEMICAL CHARACTERISTICS: 12.5% alcohol content, 6 g/l total acidity.
COLOUR: Straw yellow with pale green highlights.
AROMA: Delicate on the nose, rich in floral scents and fresh fruit aromas.
FLAVOUR: Soft, characterized by a savouriness that brings out its freshness.
SUGGESTED FOOD PAIRINGS: Ideal with fish dishes. Also excellent as an aperitif, combined with fresh cheeses.
SERVING: Serve at 10°-12° C in stemmed crystal wine glasses.
STORAGE: Store the bottles lying down in a cool, dark place.
